Campfire cooking – my favorite meal to make while camping

I love campfire cooking and we have tried several different things, but my favorite “go to” dinner to make while camping includes: pizza pudgy pies, vegetables, and for dessert… pudgy pie pie… or whatever you want to call it lol.

Here’s what we normally do:

Vegetables

These take quite awhile to cook on the fire (particularly the potatoes) so it is best to make these first.   I usually prepare these while my husband is getting the campfire situated, and then we both make the rest together.  I take a medium sized piece of foil and add about one large serving of mixed vegetables so it doesn’t get too heavy.  Usually I put 1 to 1&1/2 potatoes, and a handful each of carrots, green bell peppers, and onions, all cut into large pieces onto the foil.  I then add 4-5 “chunks” of butter in different areas over the vegetables, and sprinkle on some shredded cheese.

Seasonings I like to use:  fresh ground black pepper, onion powder, garlic powder, cayenne pepper, and a tiny bit of salt.  I then wrap that layer of foil carefully, and add a second layer of foil around it for added strength, after that, it is ready to cook.

 

Pizza pudgy pie

First, we spray the pudgy pie maker on the inside with cooking spray and also butter the outside of the pieces of bread.  Then we use pizza sauce that comes in those squeezable containers and rub the bread together to help spread the sauce (one less knife to wash that way).  We generally have a variety of toppings to pick from: shredded cheese, pepperoni, sliced black olives, banana peppers, and spinach.  After adding the toppings, we clamp the pudgy pie maker together, break off any pieces of bread that didn’t fit inside, and cook it on the campfire.

After dinner, if there’s room… we like to make “pie”.  Usually it’s the same prep (cooking spray and butter), and then the inside the bread we scoop pie filling out from a can, and depending on the flavor may add cinnamon powder.  And now, I’m hungry… can’t wait to go camping this summer!
